CHICKEN AND SAUSAGE GUMBO


I finally found HUNGRY GIRLS photo of this wonderful recipe!

If you love GUMBO, you are going to LOVE this!

I liked cooking it for the 7-8 hours. Nice and slow to let it work it's magic! It only takes 10 minutes to prep. You can't beat that for your busy schedules!

Trust me, you won't be disappointed!

CHICKEN AND SAUSAGE GUMBO from Hungry Girl

You'll need: crock pot, large bowl
Prep: 10 minutes
Cook 3 to 4 hours or 7-8 (I prefer the 7-8 myself)

1/10th of recipe (about 1 cup): 117 calories, 3.5g fat, 523mg sodium, 8g carbs, 2g fiber, 3.5g sugars, 13g protein

INGREDIENTS

8 ounces raw boneless skinless chicken breast cutlets
1/8 teaspoon each salt and black pepper
12 ounces (about 4 links) fully cooked chicken sausage, sliced into 1/4-inch coins
One 14.5-ounce can diced tomatoes with green chiles (not drained)
3 cups (24 ounces) reduced-sodium fat-free chicken broth
2 cups frozen cut okra
1 and 1/2 cups chopped celery
1 green bell pepper,  stem removed, seeded, chopped
1 large onion, chopped
1 and 1/2 teaspoons Cajun seasoning
1 teaspoon chopped garlic
1 teaspoon Worcestershire sauce
1 teaspoon ground thyme

DIRECTIONS

Season chicken with salt and pepper, and place it in a crock pot. Add all remaining ingredients and lightly stir.

Cover and cook on high for 3-4 hours or on low for 7-8 hours, until chicken is fully cooked.

Remove chicken and place in a large bowl. Shred with two forks-one to hold the chicken in place and the other to scrape across and shred it.

Return shredded chicken to the crock pot, and give your gumbo a stir. Serve it up!
